Creamy Mushroom Herb Chicken


What You Need:

  • 6 bone-in chicken thighs

  • 2 tbsp olive oil

  • 1 tsp truffle infused olive oil

  • 1 can coconut cream

  • 1 lb cremini mushrooms, sliced

  • 6 cloves garlic, thinly sliced

  • 1 lemon, sliced

  • Large handful of fresh rosemary sprigs

  • Handful of fresh sage leaves

  • Sprinkle of dried herbs de provence

  • Salt & pepper to taste

What To Do:

  • Heat olive oil in a large skillet on medium-high heat

  • Add garlic and cook, stirring frequently, until golden brown (about 3-4 minutes)

  • Remove garlic from skillet and set aside

  • Add chicken to skillet and cook until skin is golden brown and slightly crisp (about 6 minutes per side)

  • Add coconut cream to skillet, stirring to melt and distribute evenly

  • Return garlic to skillet and add mushrooms, lemon, fresh herbs, seasonings, and top with truffle infused olive oil

  • Cover and let simmer on low heat for 1 - 1.5 hours, checking for desired tenderness
