Egg in a Nest

What You Need:

  • 2 eggs

  • 5 slices bacon, cut into 1 inch pieces

  • 1/2 yellow onion, roughly chopped

  • 1 red bell pepper, roughly chopped

  • 2/3 cup shaved brussels sprouts

  • 5 cloves garlic, minced

  • 1 squeeze of lemon juice

  • salt & pepper

What To Do:

  • Add bacon to large skillet and cook over medium-high heat for about 5 minutes

  • Add chopped onion to skillet and continue cooking over medium heat for another 2-3 minutes

  • Add bell pepper to skillet and cook an additional 2-3 minutes

  • Add brussels sprouts, garlic, and lemon juice to skillet, stirring frequently to incorporate everything

  • When brussels sprouts are cooked to desired doneness, form two “holes” in the mixture to crack the eggs into

  • Crack eggs into the cleared area in the skillet and cook on medium-high, covered, until eggs reach desired doneness (mine took about 2 minutes)

  • Season entire dish with salt & pepper, serve and enjoy!
