Simple Savory Breakfast Casserole


What You Need:

  • 1 lb ground pork

  • 2 cups baby bella mushrooms, sliced

  • 4 cups spinach

  • 4 cloves garlic, minced

  • 1 yellow onion, roughly chopped

  • 1 tbsp avocado oil

  • Salt and pepper to taste

  • 7 eggs, lightly whisked

What To Do:

  • Heat avocado oil in large skillet on medium-high heat

  • Add garlic and onion to skillet once oil is hot and cook, stirring frequently, for 5-6 minutes or until caramelized

  • Remove garlic and onions from skillet and add pork

  • Cook pork, stirring frequently, until nearly done

  • Add mushrooms and spinach and continue cooking until pork is browned and cooked through and spinach and mushrooms have softened

  • Add salt and pepper to taste

  • Add pork mixture to a large casserole dish

  • Pour eggs over everything, making sure to spread evenly

  • Cover casserole dish with foil or a lid and bake in oven at 400* until eggs are cooked through (about 10-15 minutes)

  • If you’d like a crispy crust, simply remove the foil or lid for the last half of baking

  • Serve and enjoy!

  • I topped mine with some almond cheese and a sprig of fresh dill
