Chicken Celery Pear Salad

What You Need:

  • 2 cans of Trader Joe’s canned chicken, or 25 oz of shredded cooked chicken

  • 1 pear

  • 1 bunch celery

  • 1/4 cup dried cranberries

  • 1/2 cup sliced almonds

  • 1 cup light olive oil

  • 3 tbsp lemon juice

  • 1 egg

  • Dash of salt & pepper

  • Mustard powder, dried dill, oregano, garlic powder, and any other herbs/spices you like, about a 1/2 teaspoon of each

What To Do:

  • Chop the pear into 1” cubes

  • Chop celery into 1” sections

  • Add olive oil, lemon juice, egg, and all herbs and spices to a jar

  • Insert immersion blender into jar so that it is touching the bottom, then turn onto high and very slowly pull the immersion blender upwards and then lower back down, and repeat this motion until all contents of jar are fully incorporated

  • Drain canned chicken and add to a large bowl

  • Add the pear, celery, cranberries, almonds, and mayo mixture to a large bowl and stir to combine

  • I served mine in a butter lettuce wrap and ate it like a little taco!
